I was feeling in the mood for a little non Paleo treat! If you are strict Paleo, stay away! I began with making some Candied Ginger that would be a critical ingredient in my German Spiced Cookies, also known as Lebkuchen. I know I want to be strict Paleo, but I have yet to come up with a Paleo version of these cookies! While the dough needs to freeze for about 4 hours before I can use it, I only have a little photo of the Ginger I made!
- Grate fresh Ginger (however much you need)
- Slice into small pieces
- Boil in water until soft (35min or so)
- Strain, keep 1/4 cup of the water
- Weigh Ginger, and add equal weight of Sugar and the 1/4cup of water back to the pan and cook until Sugar is mostly evaporated
Then place Ginger slices on a cooling rack, I recommend that you place wax paper underneath
-Once cool, its ready to eat!
Candied Ginger can keep in a container for a week or so. For me, I put them in the food processor for the cookies! You can also purchase candied ginger, but I couldn’t find any, so I did what I had to do.
Again, there are several more step to making these cookies, so i’ll let you know how it goes!
