Where has this week gone?! I feel as though this week has just flown by! I have been completely swamped with school work. The level of work that is involved in a 15 week course that you have to complete in 15 days is exhausting. So while my amazing husband is holding this blog together while I try to stay sane, I have unfortunately, not been feeling well all week. I’ve missed work and been swamped with school and I think it is because I am not getting enough food in me! When you don’t have time to cook and  you refuse to eat crappy food you just don’t eat enough! So that is why I finally made some time to get make food that is easy to just reheat and go.

Want an easy breakfast dish? How about Quiche Cupcakes?

Quiche Cupcakes

You can really make these with whatever Veggies you like!

Ingredients
Large Zucchini Grated/Shredded
3 Carrots Grated/Shredded
12 Eggs
1/2 Tsp Sea Salt
1/2 Tsp Garlic Powder
1/2 Tsp Fresh Rosemary (Can also use dried)

1/2 Tsp Rubbed Sage
Salt and Pepper
Bacon Grease (Or other oil)
Protein (Optional)

Directions

Preheat oven to 375 degrees
Whisk all of your eggs together!

Add all of your ingredients together!
I had Pork Loin leftover so I threw that in as well for some protein!

 

Mix in your Eggs!

 

Grease your cupcake tins with Bacon Fat
and pour your mixture in.
Bake for 35-40 min or until the Quiche puffs up a bit and the edges are golden brown.

 

Cook up some Bacon and enjoy.
Yay for breakfast!
