One of the easiest things you can make for breakfast during your meal prep days, are Egg Muffins! Quick and portable these babies are delicious and good for when you’re in a pinch, but don’t want to sacrifice nutrition! They can also be used for individual snacks! Super simple and one of my go-to’s when I don’t feel like making a large breakfast.
The hubster had these after rugby practice today and LOVED them. So I thought I’d share this version. There are so many different recipes out there with different veggies you can throw in to change up your recipe! This is our favorite so far. But it is nice to change it up every once in a while. We eat a lot of eggs in this household. But I have to say, although I know how amazingly nutritious they are, I don’t LOVE to eat eggs. But I do love the nutrient impact they punch. I do meal prep a couple days a week. I prep breakfast for myself and my husband so that I don’t have to spend the time each morning, because lets face it, it is so EASY to skip breakfast. I just want to hit the gym and get my day going. Having food readily available, and properly balanced allows me to do just that. —>
Where has this week gone?! I feel as though this week has just flown by! I have been completely swamped with school work. The level of work that is involved in a 15 week course that you have to complete in 15 days is exhausting. So while my amazing husband is holding this blog together while I try to stay sane, I have unfortunately, not been feeling well all week. I’ve missed work and been swamped with school and I think it is because I am not getting enough food (more…)
