Roasted Strawberry & Rosemary Ice Cream

FullSizeRender-2I had been meaning to update this post for some time! But I needed to recreate it first for some better photos and information! I finally made the time to make my Roasted Strawberry Ice-Cream with a hint of Rosemary! The best part about it? No Ice Cream maker needed. It is Dairy and Artificial Sugar Free!
I have trouble not having a completely scheduled day. Let me rephrase that, I have a day laid out in my head. I know exactly what I want to accomplish. But my 6 month old son might have other plans. So I am slowly learning to relax into this new life… I did manage to finally get back to this dessert instead of making a sugar ladder Apple Crisp haha. Give this a shot! It is so delicious!

Cabbage with Apple & Onion Warm Salad

IMG_1320 2.jpgThis recipe is my new jam! Not a fan of cabbage? Don’t know what to do with cabbage? Try this recipe! It’s sweet and savory and it is so easy to make, especially after a long day. It also keeps well for meal prep. My husband loves sauerkraut. I mean LOVES it. I have discovered I like it as well after devouring it each time we visit Germany. The problem is I haven’t been able to recreate that perfect German sauerkraut. So until I find the perfect way to make it, this is a close substitute. We have been eating this every day lately. Give it a try! β€”>

Ginger & Lemon Morning Health Kick Shot

One of my favorite things that I took away from that trip,  other than just great memories, is this amazing little lemon juice & ginger shot that they made every morning! This shot isn’t for the faint of heart. It’s spicy and definitely wakes you up! Especially if you’re brave and add a pinch of Cayanne Pepper like I do. β€”>

Happy Holidays to you! It has been quite the week! My energy levels have been pretty low. Sleep eludes me at night. During the day I feel like I could nap for hours. Needless to say this is throwing off my To-Do list immensely. I did manage to get some workouts in, however!

Started my week off right! 30 Weeks pregnant this week and time is flying by! But I felt awesome so I smashed my workout. I love these kind of days. I have gained 24lbs so far during this pregnancy and overall feel good about it. πŸ™‚

Today the little Squisher and I are headed to Germany to spend some time with the hubster who is there for work! I was planning on flying out tomorrow morning early, but my flight was cancelled. The only other flight offered was today. Needless to say, there wasn’t time to fit in a workout as I had to rush home, pack and get to the airport! β€”>
