I was looking through good ol’ Trip Advisor to find some things to do in Kolbarid, Slovenia. Since most of the activities here are rafting and parasailing, which would be amazing, we needed to find alternatives for a family with a baby. I doubt most rafting companies would allow a 6 month old haha. I came across Apitherapy Kozjak. —>

I want Sugar! 3 Ingredient Cookies

FullSizeRender-1Typically, my husband and I avoid extra sugar as much as possible. I thought, that the only craving I really had throughout my pregnancy was Greek Yogurt with Frozen Blueberries, but looking back I realize that I made and ate A LOT of Apple Crisp. Haha. I remember my husband teasing me that I am getting a sweet tooth, something I typically lack. But I am beginning to realize that I am craving sugar still. Every damn day. So it really is time to clean that up a bit.

Encapsulating my Placenta

Now that the warning is out of the way lets get down to business. Throughout my pregnancy I had always planned on consuming my placenta. This is far more common than you think! Some people make an art print out of theirs from the web of veins, others bury theirs and plant a tree over it. Both I think are lovely ideas! Others save a dried bit of the umbilical cord in a piece of jewelry. While I think that is cool, I also don’t think I’d wear it. 😉 —>

Our First Month with Red

Things have been a bit crazy since bringing Red home from the hospital, to say the least. There hasn’t been much time to process everything, until now. Today Red is four weeks old! We are home enjoying the sunny Spring weather. But it took a lot to get to this day. Allow me to get you caught up. —>

Roasted Brussels Sprouts & Bacon

fullsizerender-6One of my favorite cooking fats to use is bacon fat. Now, I am not obsessed with bacon, nor do I eat it ALL the time like some Paleo lovers. But I do save the bacon fat in a mug and store it in the fridge. You know, just like great grandma used to do. It can add a ton of flavor to make even the pickiest of eaters enjoy their vegetables! And before you go ballistic on me about saturated fat content, you better do your research first! Let’s try and debunk that myth, shall we?

fullsizerender-4I bought a ton of veggies the other day. Typically I walk to a local vendor near my house here in Italy. But I went  to the military base the other day, so I popped in to the American grocery store, which I am thankful for, however I don’t buy vegetables there normally. They ship vegetables from all over the world, when they could simply just get them in Italy! So instead, you get vegetables that aren’t fresh. In fact, often they go bad within a day or two and you’ve paid twice the price! That point being made, I knew I needed to use them up quickly —>

Bone Broth Recipe

fullsizerenderWhy should you be making and consuming bone broth? Homemade broth is packed full of nutrients and amino acids that help support joint and intestinal health. And we all know by now that good health starts in the gut, right? If you didn’t, now you do. Google that shit, it really is fascinating. Broth is the foundation of a great soup too! But my favorite? Just warm up a coffee mug of broth and drink. So soothing and warming, I can’t get enough. It is an absolute superfood. You can find many websites touting the amazing properties of bone broth, just google it! —>

Egg Muffins

fullsizerender-2One of the easiest things you can make for breakfast during your meal prep days, are Egg Muffins! Quick and portable these babies are delicious and good for when you’re in a pinch, but don’t want to sacrifice nutrition! They can also be used for individual snacks! Super simple and one of my go-to’s when I don’t feel like making a large breakfast.

The hubster had these after rugby practice today and LOVED them. So I thought I’d share this version. There are so many different recipes out there with different veggies you can throw in to change up your recipe! This is our favorite so far. But it is nice to change it up every once in a while. Cabbage with Apple & Onion Warm Salad

IMG_1320 2.jpgThis recipe is my new jam! Not a fan of cabbage? Don’t know what to do with cabbage? Try this recipe! It’s sweet and savory and it is so easy to make, especially after a long day. It also keeps well for meal prep. My husband loves sauerkraut. I mean LOVES it. I have discovered I like it as well after devouring it each time we visit Germany. The problem is I haven’t been able to recreate that perfect German sauerkraut. So until I find the perfect way to make it, this is a close substitute. We have been eating this every day lately.
