Roasted Strawberry & Rosemary Ice Cream

 

FullSizeRender-2I had been meaning to update this post for some time! But I needed to recreate it first for some better photos and information! I finally made the time to make my Roasted Strawberry Ice-Cream with a hint of Rosemary! The best part about it? No Ice Cream maker needed. It is Dairy and Artificial Sugar Free!
I have trouble not having a completely scheduled day. Let me rephrase that, I have a day laid out in my head. I know exactly what I want to accomplish. But my 6 month old son might have other plans. So I am slowly learning to relax into this new life… I did manage to finally get back to this dessert instead of making a sugar ladder Apple Crisp haha. Give this a shot! It is so delicious!

Roasted Brussels Sprouts & Bacon

fullsizerender-6One of my favorite cooking fats to use is bacon fat. Now, I am not obsessed with bacon, nor do I eat it ALL the time like some Paleo lovers. But I do save the bacon fat in a mug and store it in the fridge. You know, just like great grandma used to do. It can add a ton of flavor to make even the pickiest of eaters enjoy their vegetables! And before you go ballistic on me about saturated fat content, you better do your research first! Let’s try and debunk that myth, shall we?

Egg Muffins

fullsizerender-2One of the easiest things you can make for breakfast during your meal prep days, are Egg Muffins! Quick and portable these babies are delicious and good for when you’re in a pinch, but don’t want to sacrifice nutrition! They can also be used for individual snacks! Super simple and one of my go-to’s when I don’t feel like making a large breakfast.

The hubster had these after rugby practice today and LOVED them. So I thought I’d share this version. There are so many different recipes out there with different veggies you can throw in to change up your recipe! This is our favorite so far. But it is nice to change it up every once in a while. If you haven’t made these yet, you’re missing out! —>

Simple & Easy Balanced Omelette

fullsizerender-3We eat a lot of eggs in this household. But I have to say, although I know how amazingly nutritious they are, I don’t LOVE to eat eggs. But I do love the nutrient impact they punch. They are simple, quick ways to get protein and lots of nutritents.  Still on the fence about eating the whole egg? Check out the book Eat The Yolks by Liz Wolfe. Not only is it a digestable read, but her writing style is comical and enjoyable!

I do meal prep a couple days a week. I prep breakfast for myself and my husband so that I don’t have to spend the time each morning, because lets face it, it is so EASY to skip breakfast. I just want to hit the gym and get my day going. Having food readily available, and properly balanced allows me to do just that.  —>

Cabbage with Apple & Onion Warm Salad

IMG_1320 2.jpgThis recipe is my new jam! Not a fan of cabbage? Don’t know what to do with cabbage? Try this recipe! It’s sweet and savory and it is so easy to make, especially after a long day. It also keeps well for meal prep. My husband loves sauerkraut. I mean LOVES it. I have discovered I like it as well after devouring it each time we visit Germany. The problem is I haven’t been able to recreate that perfect German sauerkraut. So until I find the perfect way to make it, this is a close substitute. We have been eating this every day lately. Give it a try! —>

Ginger & Lemon Morning Health Kick Shot

img_1359A few years ago I was visiting my brother and his wife in San Fransisco. One of my favorite things that I took away from that trip,  other than just great memories, is this amazing little lemon juice & ginger shot that they made every morning! This shot isn’t for the faint of heart. It’s spicy and definitely wakes you up! Especially if you’re brave and add a pinch of Cayanne Pepper like I do. —>

Paleo Pot Roast with Gravy

fullsizerenderHappy Holidays to you! I hope that you’re celebrating with family and friends! We woke up on this Christmas morning with some motivation to get things done! The hubster had to work, yes, on Christmas. While this isn’t a new concept for me, it is important to remember that not everyone has their family around them during the Holidays. I want to wish those people a very happy holiday season and I hope that you’re able to enjoy and count your blessings regardless. You are certainly not alone!

dscf0843Living in Italy is pretty incredible. I am not going to lie. One of my favorite things about it is how grounded it keeps me. Sure, they have massive style grocery stores that you can shop in, but more often there are simple vegetable stands, butcher shop etc. I love being able to just walk to a local vendors vegetable stand from my house. —>

Perfect Mashed Cauliflower

dscf0835I am a fan of potatoes. In fact, I LOVE them. I crave them often. However, I do limit my intake of those delicious little guys for a few reasons; Potatoes have a high glycemic index, meaning they raise your blood sugar more quickly than say, sweet potatoes. To me, this is only an issue if you’re eating these baby in excess. —>
